Angle is the whole game
Sharpening is not mysterious. You are grinding two flat surfaces until they meet in a line fine enough to cut. The only difficult part is holding the same angle every stroke — wander a few degrees and you round the edge over instead of refining it, which is why so many people conclude they “cannot sharpen”.
That is what separates the tools here. A guided system holds the angle mechanically, so your skill is irrelevant. A field sharpener with built-in guides gets you close. A flat stone gives you nothing and expects you to do it.
What angle should a hunting knife be?
There is no single correct number, and Work Sharp — who make sharpening systems for a living — are open about that. The principle they state is the one to hold onto: as an angle gets wider the edge gets stronger, and as it gets narrower the edge cuts better. Their own guidance runs from around 15–18 degrees per side for kitchen knives, up through pocket knives, to noticeably wider angles for heavy outdoor and camp blades that have to survive abuse.
For a hunting knife the practical read is: a dedicated skinning or caping knife benefits from a narrower, keener angle because it is slicing soft tissue; a general-purpose field knife that might contact bone wants a wider, more durable one. The most important thing is not picking a number but matching whatever angle the blade already has, which is the next section.
Find the angle before you change it
Work Sharp’s marker test is the trick worth knowing, and it costs nothing. Colour the bevel of the blade with a permanent marker. Take a few light passes at your best guess of the angle. Look at where the ink came off:
- Ink gone at the very edge only — you are too steep. Lower the angle.
- Ink still on near the edge, gone higher up the bevel — you are too flat. Raise it.
- Ink removed evenly across the whole bevel — that is the blade’s angle. Stay there.
Two or three iterations and you know exactly where to hold the knife. Do it once per knife and you will never guess again.
A word on pull-through carbide sharpeners
The cheap two-slot sharpeners with carbide inserts do work — they will put a working edge on a blunt knife in about ten seconds. Understand what they are doing to get there: they scrape metal away rather than grinding it, taking a relatively large bite each pull, at a preset angle that probably is not your knife’s angle.
That is fine on a beater. On a knife you intend to keep, each pull is removing life from the blade and re-cutting the bevel to the tool’s angle rather than the maker’s. Use the ceramic side for touch-ups and save the carbide for emergencies, or skip the type entirely if you own knives you care about.
Work the grits in order
The other common failure is jumping straight to a fine stone on a genuinely dull knife. Fine abrasives polish; they do not remove enough metal to form a new edge. All you achieve is a very shiny blunt knife.
Work coarse first, until you can feel a burr along the full length of the opposite side — that burr is proof the two bevels have actually met. Then move to medium, then fine, then strop to remove the burr. If you are not raising a burr on the coarse stage, you are not done with it, no matter how long you have been at it.
Or carry a replaceable-blade knife
There is a legitimate way to skip all of this. Replaceable-blade knives use surgical-style blades you swap when they dull, so field sharpening never enters the picture — you snap in a fresh, genuinely scalpel-sharp edge mid-job. The trade is that the blades are thin, they can break under lateral force, and you are carrying consumables.
