How much of a deer actually goes through the grinder
Start with the arithmetic, because it sizes the machine. Ohio DNR figures cited by the National Deer Association put the average field-dressed buck at 129.69 lb producing 62.51 lb of boneless venison, and the average antlerless deer at 92.27 lb producing 45.05 lb — a combined yield of 48.52%. Take out the backstraps, tenderloins and whatever roasts and steaks you like to keep whole, and a large share of what remains is grinder meat.
Now put that against the claimed rates on this page. At the BigBite #8’s claimed 7 lb a minute, the entire boneless yield of that average buck would pass through in under ten minutes. Even the compact MightyBite, at 4 to 5 lb a minute, would take well under a quarter of an hour. Meanwhile the NDA’s guide puts a beginner’s whole processing job at three to five hours per deer.
That is the single most useful thing to understand before you shop: for one or two deer, the grinder is almost never the bottleneck. Trimming is. A faster motor saves you minutes; a sharp knife and a clean trimming routine save you hours. Throughput starts to matter when several deer are waiting in the cooler at once, which is exactly when the #12 and #22 picks earn their weight.
Does a grinder pay for itself?
Sometimes, and it depends on how many deer and which grinder. The NDA’s do-it-yourself guide, written in 2018, says most processors charged at least $60 per deer at the time, and that its author recovered the cost of his basic equipment in one season. His equipment was modest — he puts the entry cost at around $200 or less, and says the vacuum sealer and grinder were the two purchases that hurt most.
Be honest with that math. Processing fees vary by region and may well have changed since 2018, so check what your local processor charges now. Then notice that several grinders on this page cost well over that $200 on their own. For a one-deer-a-year hunter, a premium #12 is a long payback. The stronger argument for grinding your own is not money at all: it is knowing that the burger in your freezer came from your deer, trimmed the way you want, with the fat you chose.
What the size number means, and what it does not
The #8, #10, #12 and #22 on these grinders are head-size classes, and plates and knives are listed by the same number. Do not assume that makes parts interchangeable, even within a brand — LEM says plainly that its standard grinder knives and plates will not fit its #10 stainless hand grinder.
What the number does not tell you is speed. On their makers’ own figures, the two #12 grinders here are nowhere near each other: MEAT! claims 7 to 10 lb a minute for its .75 HP #12, while STX claims 175 to 225 lb an hour for the Turboforce HD — which works out to roughly 3 to 3.75 lb a minute. Same head size, and the stainless machine claims something like two to three times the output. Output comes from the motor and the auger, not from the number stamped on the head.
So use the number as a rough class and the claimed rate as the real comparison:
- #8 — one to three deer a season. The claimed rates here run from 4 to 7 lb a minute, which is plenty.
- #12 — several deer, or more than one hunter’s. Check the claimed rate, because it varies widely at this size.
- #22 — a camp, a lease group, a family that processes together. The one here claims 11 to 14 lb a minute and weighs 57 lb.
- A manual #10 — occasional grinding, deer camp without power, or a hunter who would rather not own another appliance.
Ignore the wattage on the box
Grinder wattage is the least trustworthy number in this category, and it is worth knowing why. Some makers print a “max,” “peak” or “locked motor” wattage — a ceiling figure, not what the motor draws while it is grinding. STX is unusually candid about the gap: its Turboforce 3000 is sold on Amazon as a “3000W Max” grinder, and STX’s own specification lists it at 800 watts with no load and normally between 800 and 1,200 watts under load. The number on the box is two and a half to nearly four times the number that matters.
The other makers here mostly sidestep the issue by publishing horsepower only. LEM gives 0.5 HP for the BigBite #8 and no wattage on its product page. MEAT! gives .75 HP and 1 HP and no wattage, voltage or amp draw. That is why several spec rows above read “Not published” — not a research gap, but a finding. When you cannot compare motors honestly, compare the claimed pounds per minute, which at least describes the job.
Venison is harder on a grinder than store-bought beef
Deer meat carries a lot of silver skin and sinew, and those tough connective strands are what collect in a grinder head and spoil the grind. LEM’s own manual is specific about it: meat going into the grinder should be 40 degrees or colder and free of gristle, sinew, silver skin and bone. Its instruction for a second grind is to unplug the grinder and clean the head of sinew, fat or gristle that accumulated during the first pass before regrinding.
In practice that means most of the quality of your ground venison is decided with a knife, before the grinder is even switched on. A dull blade makes trimming slow and sloppy, and it is the same story inside the grinder: LEM lists a dull knife or plate alongside warm meat as a cause of meat mashing instead of extruding. Keep everything cold. This matters more than any spec
If you take one instruction from this page, take this one. Penn State Extension’s guidance on processing game meat is to keep the temperature of the meat as cold as possible, below 40°F, during grinding and mixing. LEM’s manual says the same thing from the equipment side: if meat is mashing instead of coming out in strings, chill it to 40 degrees and check the plate and knife. For stuffing sausage it asks for meat well chilled, at 28°F to 32°F.
Cold is a food-safety rule and a mechanical one at the same time. Warm meat mashes instead of coming out in clean strings, by LEM’s own troubleshooting — and every minute a tray of trim sits on a warm counter is a minute it spends above the temperature extension services want it held at. Work in small batches, keep the rest in the refrigerator or cooler, and grind straight from cold.
Two limits in the same manual are worth repeating. Do not grind bones, and do not grind deep-frozen meat. STX says it even more bluntly on its Turboforce HD page: the grinder will not grind bones. None of the grinders here will, and a home grinder is not a bone saw.
Fat, and why ground venison needs it
Venison is lean: Penn State Extension’s nutrition table lists 3 oz of roasted deer at 2.7 g of total fat. LEM’s manual says added fat gives wild-game burger moisture, and that sausage without adequate fat will be dry when cooked and tend to crumble. The published guidance agrees on adding fat and differs on how much:
- LEM’s manual says to add a minimum of 10% pork fat when making burger from wild game, or beef fat if pork is not available, and at least 20% fat for sausage.
- Penn State Extension’s canning instructions for ground venison add one part high-quality pork fat to three or four parts venison before grinding — a considerably richer mix.
Penn State’s sausage guidance frames it as selecting the proper lean-to-fat ratio for texture and binding, which is the right way to think about it: the ratio is a recipe decision, not a safety one. Weigh the fat on a kitchen scale rather than eyeballing it, add it before the first grind so the two plates mix it through, and keep it as cold as the meat.
Coarse, then fine
Both sources describe the same two-step method. Penn State’s sausage guidance is to coarse-grind the meat, add the rest of the ingredients and regrind. LEM’s manual says to grind through the coarse plate first, chill the meat if a finer grind is wanted, clean the head and regrind through the fine plate. That is why the plate count in the box matters more than it looks: every electric pick here ships at least a coarse and a fine plate, and the STX ships four.
Aluminum or stainless: the cleanup decision
This is the difference you will feel most often, and it is invisible on the box.
Aluminum heads keep a grinder light and the price down, and they come with care rules. LEM’s MightyBite manual says its grinder parts are not dishwasher safe, that discoloration may occur, that you should not soak them, and that they should be hand-dried immediately. STX says the same about the cast-aluminum head and plates on its Turboforce HD: wash with mild detergent and hot water, towel dry immediately, store dry.
Stainless designs can be simpler to live with. MEAT! describes the components on both of its grinders here as dishwasher safe. LEM does not say either way for the BigBite #8 on its product page, so treat its head as hand wash until the manual tells you otherwise.
Whichever you buy, clean it the same night. Penn State Extension’s venison guidance is to thoroughly clean and sanitize all equipment, including the tabletop meat grinder, before and after use, and its game-processing guidance gives a sanitizing solution of 1 tablespoon of chlorine bleach per gallon of water for surfaces. A grinder head with fat and sinew packed into the auger is a food-safety problem by morning.
Chronic wasting disease and the grinder
Grinding makes the handling rules upstream matter more, because everything that goes into the hopper gets mixed together. CDC guidance for hunters is to wear gloves when field-dressing, bone out the meat, minimize handling of brain and spinal tissue, and consider having the animal tested before eating meat from an area where chronic wasting disease has been found. Boned-out trim never carries spinal column into the grinder in the first place, which is one more reason the gutless quartering method suits hunters who process their own. If you are waiting on a test result, keep that deer’s meat separate and do not grind it together with another animal’s — a grind mixes the whole batch.
After the grind: freezing and cooking
Package in meal-size portions. Penn State’s venison guidance is about one pound per package, wrapped in freezer wrap, heavy-duty foil, vacuum bags or freezer bags with the air removed, and it says properly wrapped game meat will store in the freezer for 9 to 12 months. A vacuum sealer is convenient but not required — the NDA guide’s author calls it nice to have and says plastic wrap followed by freezer paper also works fine for venison.
Cook ground venison to 160°F. Penn State Extension lists ground venison, venison sausage and deer bologna at a minimum internal temperature of 160°F, and whole cuts at a lower 145°F. Penn State calls a food thermometer the only reliable method of checking, and notes that color change is not always an indicator of a safe internal temperature.
Manual or electric?
A hand grinder is a real option and not just a budget one. It needs no outlet, it has no motor to fail, and for a hunter who processes one deer every season or two it is enough. The honest cost is effort: LEM claims 2 to 4 lb a minute for its #10, and that output comes from your arm. A coarse-then-fine double grind of a whole deer’s trim by hand is a long evening.
If you process every season, or more than one deer, buy the electric. If you are not sure yet whether home processing is for you, a hand grinder is the cheaper way to find out, and it stays useful at camp even after you upgrade.
What a grinder will not fix
It will not rescue meat that was not cooled. The work that protects venison happens long before the grinder — getting the deer open, getting the heat out, and keeping the meat clean on the way home. Our field-dressing guide and game bag picks cover that part.
And it will not turn warm, sinewy trim into good burger. A cold tray of well-trimmed meat through a modest #8 makes better ground venison than a warm pile of trim through the biggest grinder on this page.
